Ricardo Ayerza (Jr.)

Ricardo Ayerza (Jr.) is an Associate in Arid Lands at the Office of Arid Lands Studies of the University of Arizona. Born in Buenos Aires, he is the author of many articles and of three books about new crops. Since 1990 he has been doing research on production and uses of chia.

Author of the book: CHIA - Rediscovering a forsaken Aztec food.

Vilma Lo Presti has always been a deep observer of human behavior, devoted to the search of solutions to health problems in general.

A graduate in Psychology at Universidad del Salvador of Buenos Aires, Argentina, besides practising her profession and acting in her business, she essayed her great passion: human diet as a harmonic source of pleasure and of health at the same time.

Qualified at the Instituto Argentino de Gastronomía, and having attended plenty of courses and seminars, Ms Lo Presti starts with this publication a promising path so as to transmit her readers the knowledge to be able to cook with the purpose of delighting their taste without risking their health.
